John and Dorothy Priske run Fountain Prairie Farm, a sustainable beef farm near Fall River, Wisconsin. Fountain Prairie Farm, which also includes a bed and breakfast in the couple’s 1899 Victorian farmhouse, incorporates a range of climate- and energy-conscious practices, including wind turbines and sustainable land management. The quality of the Priskes’ beef—served in some of the region’s best restaurants, including L’Etoile and Graze—and their meticulous attention to the health of the land are intertwined. Recorded at the Wisconsin Academy's public forum, "Innovators Showcase: Wisconsin’s Climate and Energy Leaders," on April 29, 2013, at Discovery World in Milwaukee.

Contributors

John and Dorothy Priske have owned and operated Fountain Prairie Farms in Fall River Wisconsin since 1986. They have the largest herd of Scottish Highland cattle in the Midwest. They direct market the beef to restaurants in the Madison and Milwaukee area as well as the Dane County Farmers Market located in Madison.
